The red Barolo "Cannubi" is one of the most important bottles made by the Paolo Scavino winery. It is, in fact, a product that comes from Nebbiolo grapes from one of the most vocated areas of the entire appellation, cultivated in vineyards that are more than seventy years old, where yields are very low. This combination of characteristics gives rise to an imposing and structured wine, in which the harmony of the drink tells of very fine tannins and a set of intense aromas.
This Barolo wine "Cannubi" comes from the pure grapes of a great native Piedmontese grape variety, widely grown throughout the region, Nebbiolo. The vines of this variety grow within one of the most historic crus in all of Barolo, Cannubi, which in fact, gives its name to the label, located about 290 meters above sea level, facing south and southeast. The grapes, once harvested and brought to the winemaking facilities of Paolo Scavino's cellar, macerate and ferment in steel tanks, thanks to the presence of indigenous yeasts; malolactic fermentation then takes place in oak barrels. This is followed by the ageing phase, which involves four different steps: 12 months in steel, 10 in French oak barrels, 14 in large barrels and, finally, after bottling, an additional 10 months of maturation directly in the glass.
"Cannubi" is a Barolo that, on visual examination, announces itself with a beautiful colour, typically ruby, crossed by reflections tending to garnet in the rim. The aromas that envelop the nose recall well-ripened red fruit, as well as more spicy notes that derive from the period of ageing spent in wood. In the mouth, it is decidedly full-bodied and powerful, with a wide and tasty, very elegant sip. A Piedmontese red of absolute depth, with which the Paolo Scavino winery confirms its ability to present different expressions of one of the most important appellations not only of the entire region but also of the global Italian wine scene.
